Elderberries are primarily sourced from Europe and North America. We care for ten bushes here at the farm lining our vegetable garden and the greenhouses. We harvest fresh elderflower in early Summer and fresh elderberries shortly after. Elder spreads through its roots and thrives in the full Vermont sun. The birds go crazy for the berries so we try to harvest them fast! We source the dried elderberries from the Pacific Northwest, as our bushes don’t yield enough for both fresh and dried production. The dried berries are slightly less bitter than the fresh. The branches and leaves are poisonous, so we only harvest the berries. Small stems still left on the berries are considered safe.
Elderberries are known to support the body's natural defense. Because elderberries have high amounts of flavonoid rich compounds, they contain antioxidants that protect cells from the damage of free radicals and outside elements. There is a long history of these berries being used to support immune function during seasonal challenges to promote health and vitality. The berries can be enjoyed in herbal infusions and syrups, often combined with propolis or echinacea. These tonics are great for immune protection during traveling, at home or at the office.
