The origin of the word hyssop comes from the Hebrew word ezob, which means “holy herb,” and was often hung in homes and on graves for spiritual protection.
A field of hyssop is covered in bluish-purple flowers. This plant is another wonderful pollinator attractor, and we often see butterflies, bees and many other insects buzzing in our hyssop field.
We leave the crop in the field for three years and aim to harvest the perennial at peak flowering. When we transition the harvested aerial portions of the herb to the dryers, we find that it dries really fast as it has a lower moisture content than many of our other botanicals.
The complex and minty aromas of this resilient plant can be enjoyed through inhalation but also through distillation, which yields a fragrant essential oil used in aromatherapy, perfume, and liqueur. This herb tastes slightly bitter and very minty. We love to infuse hyssop in a bowl of hot water for a facial steam.
