Traditionally appreciated for its use as a culinary and cosmetic herb, lemon balm can be added to food for a citric lift or into hot water as a facial steam. The herb is known to produce calming effects and ground the nervous system. For centuries in Europe, the herb was used to promote healthy digestion, underlining its calming effects.

We dry the aerial portions at a lower temp to preserve the aromatic citrusy terpenes of the plant. As lemon balm is a member of the mint family, visitors to the farm often think the herb is mint. However, upon inhaling the brilliant aroma, they quickly realize it’s this fantastic herb.

When growing this herb, we leave it in the ground for a few years. We find that it grows well on high and dry fields that are sloping, and often we can harvest the whole field 2-3 times in one season. This is our farm crew’s favorite, because it’s super easy to handle, smells amazing, and the yields are high. Melissa is the Greek translation for “honeybee,” and bees surely love this herb too.
